Freshers’ Recipes: Baked Potato Ideas


Looking for an easy meal that requires minimal effort but still tastes delicious? Then look no further! The humble baked potato is exactly what you need! We’ve provided some simple steps on how to cook your jacket or sweet potato, and added a wee filling idea for inspiration – but you can pretty much put anything in them, from tuna mayo to baked beans & cheese!

Baked jacket potato/sweet potato:

  1. Preheat the oven to 200°C
  2. Prick the potato all over with a fork, then place on a baking tray and brush with oil
  3. Bake for 50 minutes – 1 hour until the skin is crispy and the potato is tender!
  4. When done, cut the potato open and add a wee bit of butter/spread, then you’re ready to add a filling!

Microwaved jacket potato/sweet potato:

  1. Prick the potato all over with a fork
  2. Place on a plate, then microwave for 6 minutes (for a jacket potato) or 8-10 minutes (for a sweet potato), or until the potato is tender, turning once

Filling idea

Roast pepper & houmous (vegetarian, vegan)

You will need:

1 pepper, cut into chunks
Olive oil
1 big spoonful of your favourite houmous
Smoked paprika
Butter/spread

  1. Preheat the oven to 200°C
  2. Place the chopped pepper onto a baking tray and drizzle over some oil and smoked paprika, then stir to combine
  3. Roast in the oven for around 20 minutes (you can do this while your potato is baking!)
  4. When the pepper is cooked, pop the houmous onto your potato and add the peppers on top!
  5. Enjoy!
